Baked Cod with Corn Bread on a bed of Spinach
Serves 4-6 people
INGREDIENTS
Codfish Steak
- 1 Cod Fillet per person
- 1 large Onion
- 4 Garlic cloves
- ½ Corn Bread
- Adega Mayor Olive Oil, as needed
Spinach
- 1 bunch of Spinach
- 2 garlic cloves
- Adega Mayor Olive Oil, as needed
- Salt, as needed
Potatoes
- 2 medium Potatoes per person
- 1 Onion
- 2 garlic cloves
- Adega Mayor Olive Oil, as needed
- Salt, as needed
- Pepper, as needed
INSTRUCTIONS
Preparing the Codfish
- Start by cutting the onion into slices and arrange them in the bottom of a baking tray, together with two chopped garlic cloves. Arrange the Codfish on top of the onion, skin side down, and generously drizzle with Adega Mayor Olive Oil.
- Place the tray in a preheated oven at 180 degrees Celsius for about 40min. The time in the oven will depend on the thickness of the cod.
- Meanwhile, use a food processor or chopper to mince the corn bread and two garlic cloves.
- After 30 mins, sprinkle the corn bread over the codfish and bake again for 5 mins until the bread is nicely browned.
Preparing the Spinach
- Bring water to the boil and season it with crushed garlic cloves, salt and a drizzle of Adega Mayor olive oil.
- When the water is boiling, add the previously washed spinach.
- After 5 mins, remove the spinach, drain it and rinse in cold water in order to stop the cooking and to keep the spinach's vibrant colour.
Preparing the Potatoes
- Wash the potatoes thoroughly by rubbing their skin to remove all the dirt.
- Chop the onion and garlic, and cut the potatoes into medium-sized slices, arranging them on the bottom of a tray on top of the onion and chopped garlic.
- Sprinkle with salt and pepper, and drizzle generously with Adega Mayor Olive Oil.
- Place the tray in the oven for about 45 mins until the potatoes are slightly crispy.
- Serve by arranging the codfish on a bed of spinach and potatoes and drizzling once again with a generous portion of Adega Mayor Olive Oil.
